This is an easy to prepare and delicious recipe for a post work out meal. The best part is you can make a big batch of them and refrigerate or freeze them for later in the week. Bon appetite!
Load the top with as much fruit as you want. Try just 2 pancakes with mounds of your favorite fruit. You may also substitute egg beaters for egg whites below:1 teaspoon baking soda, 1 teaspoon baking powder
2 teaspoons ground cinnamon
1 1/2 cups whole wheat flour,1 teaspoon canola oil
3 tablespoons light brown sugar
1 teaspoon vanilla extract, 1 egg, 2 egg whites
1 cup old fashioned oatmeal2 cups buttermilk

1. In bowl, combine oatmeal and buttermilk, let stand for 2 mins. Beat in oil, egg, egg whites, and vanilla.
2. Combine dry ingredients in small bowl. Add dry ingredients to wet ingredients, stirring only until combined.
3. Coat large nonstick skillet with cooking spray. Place over medium heat. Pour 1/2 cup batter onto skillet and cook 1-2 minutes on each side until lightly browned.
4. Top with your favorite fruit or light syrup before serving. Refrigerate or freeze leftovers and use on future mornings --just pop in the micro!
